In Japan, an izakaya is a type of tavern that cultivates an unhurried atmosphere in which to enjoy bar snacks. Originally a snack bar in front of sake shops, over hundreds of years they have developed an array of distinctive items, which may include sushi. This helps explain the small plates style of service and offerings at Izakaya by Katsuya, which edged out more conventional Japanese restaurants for the win this year. Locals have taken to this style of Japanese tapas, which includes grilled meats and seafood, simple sautéed vegetables, tempura, and hearty items like stewed sparerib and baked salted orange roughy.
